Peppermint Candy Eggnog Cocktail

Ingredients

1 part Umpqua Dairy Peppermint Candy Ice Cream
1 part Umpqua Dairy Egg Nog
Rum or Peppermint Schnapps to taste
1 1/2 candy canes per drink.

Directions: Crush 1/4 of the candy canes to use to rim the glass and as a garnish. Set aside. Blend ice cream and egg nog in a blender until smooth. Stick back in the freezer for a few moments while you rim the glasses.

To rim the glasses, place a thin layer of egg nog on a plate and set the glass rim first down in it. Make sure it coats evenly. Don't get too much nog on the rim or it will run. Place the crushed candy on another plate and place the glass facedown, giving a twist. Once your glasses are rimmed, pull the blended drink from the freezer and carefully pour into the glasses.

Garnish with a candy cane and serve immediately
