Hot Chocolate Affogato with Peppermint Candy Ice Cream

1 1/2 cups of Umpqua Dairy whole milk
1/4 cup chilled Umpqua Dairy heavy cream
2 1/2 tablespoons sugar
pinch of kosher salt
1 teaspoon vanilla extract
2.5 ounces semisweet chocolate, chopped
1/3 cup cocoa powder 1 pint Umpqua Peppermint Candy ice cream
Whipped cream and candy canes, for serving (optional)

Directions Combine the milk, 1/4 cup of heavy cream, sugar, salt, and 2 tablespoons water in a large heavy saucepan, and set over medium heat.  Add the vanilla extract, and bring the mixture to a boil, stirring with a wooden spoon to help dissolve the sugar.  Add the chopped chocolate and cocoa powder, and whisk the mixture until the chocolate melts, and the mixture just comes to a boil.  Remove from the heat.  Transfer the hot chocolate mixture to a blender, and blend until foamy, about two minutes. Scoop 2-3 scoops of Umpqua Peppermint ice cream into a dessert bowl or large cup. Pour a generous amount of chocolate sauce over the top of ice cream. Garnish with whipped cream and candy canes, if desired. Serve immediately.
