Lemon Poppy Seed Sammys

The sun is out, the grass is green, the kids are out of school and you’re looking for a light, citrusy treat that won’t kill your diet but still satisfies your sweet tooth. Enter the mini ice cream Sammy! Made with just two small cookies and a small scoop of Umpqua ice cream, it’s just enough to satisfy without really cheating. (And if you’re not dieting, have two -they’re small!)

Here’s what you need:

1 package of small cookies (we used lemon cookies from the bakery, but you can use vanilla wafers or any small cookie)
1 Red round of Umpqua Lemon Poppy Seed ice cream
1 mini ice cream scoop

LPS_lemonsammy_step1Step 1: Gather your ingredients.

LPS_lemonsammy_step2Step 2: Scoop ice cream, fill the scoop full and scrape off excess. Place on the flat side of one cookie.

LPS_lemonsammy_step3Step 3: Using the back of the scoop, flatten ice cream so that it spreads out and fills cookie.

Step 5: Place on pretty plate and either serve immediately or place in the freezer until time to serve.

Step 6: ENJOY!!!
